I think that Pages would not act similar to their original selves, mostly because of how I think of their creation. They are made by the Library for committing heinous or inexcusable crimes, and thus the Library controls their behavior. I think they would be very polite, almost to the point of being uncomfortable, but also kind of quiet and shy. They try to hide from patrons unless they are needed. This said, I do think that Pages retain some individuality, basically they keep some of their original character, but an element of free will is removed.
I think that Pages would be masters of bending the physical Library to their wills. In an article I am currently writing, patrons can be trained to 'will' the Library to kind of bend around them to get places faster. It is somewhat difficult though, and speed varies from patron to patron. With patrons it is also restricted, such as them not being able to fast travel to restricted sections and such. Not so with Pages. Pages are so good at this bending that they can think of where they want to go, then climb over the next shelf and they are there. Only beings with incredibly powerful wills can match the Pages capabilities.
I think Pages probably just do the obvious for the most part. They retrieve and return books to their shelves, guide patrons to what they're looking for, and provide a way to get out of the stacks if a patron is lost. I do think that some might do some stranger tasks though. Like there may be a Page that has to feed the giant orca or a Page that is permanently assigned to the haunted house. There are standard Pages, but also those that are more specialized. I do think that Pages are routine based, meaning that they will probably have the same job for a very long time and not fluctuate too much.
I think it would be incredibly difficult to be attached to a Page. They seem like they would be so alien since their original wills were replaced by the Serpent's will, and the Serpent is alien itself. I think it could be interesting to have a Page that is abnormal and retained a lot more of its will than most, and then you could add more unique characteristics to it which would make it more relatable.
